The Mumbai toast sandwich is a quick satisfying meal for many students and office-goers. The original version includes thin slices of boiled potatoes, tomatoes, cucumber, onion, beetroot and capsicum. Most stalls still toast this sandwich over coal which also contributes to its unique flavour. It is typically served with a red garlic chutney, green coriander OR mint chutney and tomato ketchup.
I remember this version of the "Bombay Toast Sandwich" from my student days when this sandwich paired with Aarey Energee flavoured milk or Lassi used to keep me going for the entire day when I was out of home.
There are many well known sandwich stalls that do amazing variations of the toast sandwich. While I also like to gorge upon the variants, the classic Bombay Toast Sandwich still remains a popular choice.
Just a month before the COVID 19 lock-down, I enjoyed this sandwich at the stall opposite the Chumbak store at Kala Ghoda.
